THALYSIA GREEK HONEY :
THALYSIA* GREEK HONEY is an unadulterated food which bees produce naturally. We only package it after a very light filtration, just to get the bee wings etc out, without heat or other chemical process or admixture. We do not blend, pasteurize, add or take anything out of it. It is raw, 100% natural honey. Bees carry flower pollen and forest tree honeydew into their hive, enrich them with their own secretions and then store it in the wax honeycombs until it becomes mature for consumption.

*Thalysia (Θαλύσια) was the name of a farmers' festival for the dedication of the first fruits in ancient Greece

The Bad, the Illegal, the Fake and the Ugly: Due to lax legal definition on what is classified as honey, many products are falsely labeled as "honey" though in reality they only contain small to minute quantities of natural bees honey admixed with corn syrup and other molasses sometimes upwards of 95%. Many other brands carry Chinese "honey" which is the lowest quality internationally. Chinese honey has been pasteurized and highly heated (destroying in the process all the vitamins, antibacterial and antioxidant components that make honey such a good and healthy food, leaving just the calories) in order to filter out the pollen. The combination of pollen in honey acts as a marker that betrays its location and origin. Since the US government has imposed a 260% anti-dumping tariff on Chinese honey, Chinese exporters work closely with unscrupulous importers and easily bypass the tariffs, importing cheap (and worthless) Trojan horse Chinese honey via Turkey and Germany but not only.
At the same time Chinese honey companies have set up shop in Ukraine, and Ukraine has started importing (and exporting) "imitation honey". No wonder those bear-shaped honey bottles are so cheap : Imitation honey meets corn syrup, and partners with Chinese resin process heated honey!
On another front, the hype of Manuka Honey is holding strong, with prices going through the roof at the counter, and with New Zealand casually exporting tone-loads more Manuka honey than it is actually producing.

THALYSIA Raw GREEK PINE HONEY
is a robust, medium sweetness, low acidity honey of unique aroma and warm taste, reminiscing of pine wood sap. It is a coniferous forest honey made from the sweet honeydew of the Marchalina Hellenica
pine sap
aphid, indigenous to Greece. Greek pine honey has about ten times the mineral content of floral honeys and a much higher than average amino acids content. Thalysia Raw Greek Pine Honey is high in oligosaccharides - prebiotics beneficial to the digestive system. Pine Honey tends to resist crystallization due to its high fructose & low glucose to water ratio. Rare in the US, Greek pine honey is sought after for its digestive health benefits.

Thalysia Greek PINE Honey has been granted the
2016 Superior Taste Award with
 1 golden star

There are many different types and varieties of honey but the most important categories are:
• Flower honey which can be divided into polyfloral and monofloral honey. Floral honey is produced from the nectar of the flowers.
• Honeydew honey which comes from honeydew secretions which bees collect from Mediterranean pine, fir and oak trees.
• Mixtures of the above.

Raw, unprocessed, unheated, natural honey is the ONLY human nourishment that does not expire, ever!
Provided that it is kept in closed jars it can literally last for thousands of years and still be good to consume, as honey found in Egyptian pyramids has proven. Natural honey solidifies after some time through crystallization and is perfectly unspoiled : it can be re-liquefied if so desired by immersing the closed jar for a few minutes into warm (not hot) water.

THALYSIA Raw GREEK THYME HONEY
is a rare fragrant honey, highly prized in Greece since antiquity for its divine taste, subtle aroma and well documented health benefits.
Aristotle himself considered thyme “excellent” and “golden in hue”, the standard to which all other honey was compared to and he praised its wound healing, antibacterial properties.
Bees collect its nectar mid June to early July from the indigenous wild-grown thyme bushes (Thymus-Θύμος)
which grow on sunny, dry mountain sides of Crete and other islands of the Aegean sea.

THALYSIA Raw GREEK MOUNTAIN HONEY - Awarded 3 golden Stars at the 2017 SUPERIOR TASTE AWARDS
(Wild Flowers and Coniferous Mountain Honey)
THALYSIA Raw GREEK MOUNTAIN HONEY is harvested in the coniferous mountain forests of Macedonia, Greece, where wild flowers grow in the shadows of cypresses, pine trees and evergreen firs. Bees collect coniferous honeydew and wild flower nectar to produce this medium sweet warm tasting honey. A product of subtle aromas from unspoiled mountains, this honey combines the antioxidant vitality and full mineral content of coniferous tree honey with the delicate sweetness of the healthy nectar juices of the wild flowers of Greece.

special order: THALYSIA Raw Greek Arbutus Unedo (strawberry tree) Honey
HOW WELL DO YOU KNOW HONEY? You probably know that most "supermarket honey" is not really honey: Watered down corn syrup blended with some honey should not be branded as "honey". You probably heard that New Zealand exports about ten times as much "Manuka honey" as it produces yet the consumer pays astronomical prices for fraudulently advertised product. German honey conglomerates have been caught red handed mixing Chinese and Vietnamese rice syrup "honey" to their curiously cheap "German" honey. Our Raw, mono-varietal THALYSIA Greek honey is harvested and packed at the source at the bee keepers cooperative of Nikite, Chalkidice, in historic Macedonia, Greece. It is unheated, unprocessed, and only lightly filtered. As all true, raw honey, it will at some point crystallize. Far from being a defect, this is actually proof that it is true, unheated honey, which keeps all it vitamins, trace minerals and antioxidants undamaged.
REMEMBER: raw, unprocessed, unadulterated honey does not have an expiration date (the "best by" date is really for protecting the consumer from the fake stuff): real honey, like THALYSIA Raw Greek Honey, is the only food source in nature that never spoils and as long as the jar keeps moisture out, it can literally last and be adible for thousands of years.

THALYSIA Raw ARBUTUS HONEY
Introducing a gourmet bitter specialty honey

One of the rarest and distinctively unique uni-floral honeys from the Mediterranean is the bitter tasting honey of the Strawberry Tree (Arbutus Unedo in Latin - Koumaria in Greek). It is the last honey of the year, harvested in early winter. It is dark caramel, almost black in color, pungent and bitter, with a distinct bitter sweet aftertaste. Its reported beneficial biological and antiseptic properties have been put to use in traditional homeopathic medicine since antiquity. The biological and antioxidant ability of this bitter honey as well as its taste have been attributed to homeogentisic acid and various beneficial phenols. It crystalizes quickly.

With THALYSIA you don't pay for fancy jars: we use simple, traditional Greek "honey jars"...but
we pour inside them the best and purest raw HONEY money can buy!
